Ingredients
- 2 large boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 pieces large eggs
- 1 cup Italian seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 4 leaves fresh basil leaves(optional)
- 1 teaspoon garlic powder
Instructions
- 1
Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- 2
Slice chicken breasts in half horizontally to create four thin cutlets, then pound them to an even 1/2-inch thickness.
- 3
Set up three shallow bowls: one with flour and garlic powder, one with beaten eggs, and one with a mix of breadcrumbs and half of the Parmesan.
- 4
Dredge each chicken piece in flour, dip in the egg wash, and then coat thoroughly with the breadcrumb mixture, pressing firmly to adhere.
- 5
Heat olive oil in a large skillet over medium-high heat and fry the chicken for 3-4 minutes per side until golden brown and crispy.
- 6
Spread a thin layer of marinara sauce on the bottom of the baking dish and arrange the fried chicken on top.
- 7
Top each chicken breast with the remaining marinara sauce, shredded mozzarella, and the rest of the Parmesan cheese.
- 8
Bake for 15-20 minutes until the cheese is bubbly and slightly browned, then garnish with fresh basil before serving.
