Ingredients
- 4 links Fresh Argentine Chorizo sausages
- 4 units Baguette or crusty French rolls
- 1 cup Fresh parsley, finely chopped
- 1 tablespoon Dried oregano
- 3 cloves Garlic cloves, minced
- 0.5 teaspoon Red pepper flakes
- 2 tablespoons Red wine vinegar
- 0.5 cup Extra virgin olive oil
- 1 pinch Salt and black pepper
- 1 teaspoon Lemon juice(optional)

Prepare the chimichurri by mixing parsley, garlic, oregano, red pepper flakes, vinegar, and olive oil in a bowl.

Let the chimichurri sit for at least 30 minutes at room temperature to allow flavors to meld.

Preheat your grill to medium-high heat.

Place the chorizo sausages on the grill and cook for about 10-15 minutes, turning occasionally until fully cooked.

Once the sausages are nearly done, butterfly them by slicing lengthwise almost all the way through and opening them like a book.

Place the butterflied sausages back on the grill, cut-side down, for 2 minutes to get a nice char.

Slice the bread rolls lengthwise and lightly toast them on the grill.

Place one sausage in each roll and generously spoon the chimichurri sauce over the meat before serving.
