Ingredients

  • 2 medium sweet potatoes, diced into 1/2-inch cubes
  • 2 tbsp olive oil
  • 1.5 tsp chipotle chili powder
  • 0.5 tsp smoked paprika
  • 0.5 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 4 large eggs
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh cilantro, chopped(optional)
  • 0.5 avocado, sliced(optional)

Instructions

  1. 1

Prep all vegetables: dice the sweet potatoes, onion, and bell pepper, and mince the garlic (about 10 minutes).

  2. 2

Heat 1.5 tbsp olive oil in a large skillet over medium-high heat. Add the sweet potatoes in an even layer and cook undisturbed for 4 minutes to brown, then stir and cook 8 more minutes until tender and caramelized.

  3. 3

Push the sweet potatoes to one side, add the remaining 0.5 tbsp oil, then add the onion and bell pepper. Cook 3 minutes until softened, then stir in the garlic, chipotle powder, smoked paprika, salt, and black pepper. Toss everything together and cook 2 more minutes.

  4. 4

Meanwhile, in a separate nonstick skillet, fry the eggs in a lightly oiled pan over medium heat for 2-3 minutes until the whites are set but the yolks are still runny.

  5. 5

Divide the hash between two plates, top each with two fried eggs, and garnish with cilantro and avocado if using. Serve immediately.
