Ingredients

  • 250 g ground beef (or ground turkey)
  • 2 tbsp taco seasoning
  • 1 can (400) diced tomatoes (canned)
  • 1 tbsp tomato paste(optional)
  • 170 g dry pasta (penne or elbow)
  • 480 ml water or low-sodium broth
  • 120 g shredded cheddar cheese
  • 1 tsp olive oil(optional)
  • to taste salt(optional)
  • to taste black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Dice or drain any tomatoes if needed, measure pasta and cheese, and set out taco seasoning and tomato paste.

  2. 2

Cook (25 minutes): In a skillet over medium-high heat, add olive oil (if using) and brown the ground meat until no longer pink; stir in taco seasoning. If using beans instead of meat, warm them with the seasoning until coated.

  3. 3

Cook (25 minutes): Stir in diced tomatoes and tomato paste (if using), then add pasta and water/broth. Bring to a simmer, reduce to medium-low, cover, and cook until pasta is tender (stir once halfway through).

  4. 4

Cook (25 minutes): Turn off heat and sprinkle in cheddar cheese. Stir until melted and glossy; season with salt/pepper if needed. Serve immediately.
