Ingredients

  • 12 ounces Restaurant-style tortilla chips
  • 2 cups Shredded Mexican blend cheese
  • 15 ounces Black beans, rinsed and drained
  • 0.25 cup Pickled jalapeños(optional)
  • 2 medium Roma tomatoes, diced
  • 0.25 cup Red onion, finely diced
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream
  • 0.5 cup Guacamole
  • 1 tablespoon Taco seasoning

Instructions

    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    In a small bowl, toss the drained black beans with the taco seasoning until evenly coated.

    Spread half of the tortilla chips in an even layer on the baking sheet.

    Top with half of the seasoned black beans and half of the shredded cheese.

    Repeat with the remaining chips, beans, and cheese to create a second layer for maximum coverage.

    Bake for 8-10 minutes until the cheese is bubbly and the edges of the chips are lightly toasted.

    Remove from the oven and immediately top with diced tomatoes, red onion, and jalapeños.

    Finish with dollops of sour cream, guacamole, and a sprinkle of fresh cilantro before serving.
