Ingredients
- 2 large portobello mushroom caps
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar(optional)
- 1 clove garlic(optional)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 120 g fresh mozzarella
- 1 medium tomatoes
- 6 leaves fresh basil

Preheat oven to 425°F (220°C). Clean the portobello caps and remove the gills with a spoon. Brush both sides with olive oil and season with salt and black pepper.

Roast the portobello caps for 20 minutes, until tender. (Optional: drizzle with balsamic and sprinkle with minced garlic during the last 5 minutes.)

While the mushrooms roast, slice the tomatoes and tear the basil. Cut mozzarella into slices.

Remove the mushrooms from the oven and top each cap with mozzarella, tomatoes, and basil. Return to the oven for 2–3 minutes just to soften the cheese, then serve.
