Ingredients

  • 12 oz boneless, skinless chicken breasts
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 2 tbsp balsamic vinegar
  • 1 tbsp tomato paste
  • 0.5 cup chicken broth (or water)
  • 0.5 tsp dried oregano
  • 6 oz mozzarella, sliced or shredded
  • 0.5 cup fresh basil leaves

Instructions

  1. 1

Prep (10 minutes): Pat chicken dry and season both sides with salt and pepper. Mince the garlic and slice/shred the mozzarella; tear basil leaves.

  2. 2

Cook (22 minutes): Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until browned and mostly cooked through.

  3. 3

Reduce heat to medium. Add garlic and cook 30 seconds, then stir in tomato paste, oregano, and balsamic vinegar. Pour in broth and simmer 6–8 minutes, spooning sauce over chicken, until chicken is cooked through and sauce slightly thickens.

  4. 4

Finish: Turn off heat. Top chicken with mozzarella and cover the skillet for 2–3 minutes until cheese melts. Scatter basil over the top and serve immediately.
