Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 1/4 tsp salt(optional)
  • 1/4 tsp black pepper(optional)
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 cup cherry tomatoes
  • 6 oz fresh mozzarella
  • 1/3 cup balsamic vinegar
  • 1/4 cup basil leaves(optional)

Instructions

  1. 1

Prep (10 minutes): Slice the chicken breasts in half horizontally (to make thinner cutlets). Season both sides with salt and black pepper. Mince the garlic. Halve the cherry tomatoes. Tear or slice the mozzarella.

  2. 2

Cook (20 minutes): Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until cooked through. Transfer chicken to a plate.

  3. 3

In the same skillet, reduce heat to medium. Add garlic and cook 30 seconds. Add cherry tomatoes and cook 3–4 minutes until they soften and release juices.

  4. 4

Return chicken to the skillet. Top each piece with mozzarella. Cover and cook 2–3 minutes until mozzarella melts.

  5. 5

Finish: In a small pan or microwave-safe bowl, warm balsamic vinegar until slightly thickened (about 2–3 minutes). Drizzle balsamic glaze over the chicken and tomatoes. Top with basil if using.
