Caprese Chicken Skillet

Ingredients

  • 12 oz chicken breast
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1.5 tbsp olive oil
  • 2 cloves garlic
  • 1 cup cherry tomatoes
  • 1.5 tbsp balsamic vinegar
  • 6 oz fresh mozzarella
  • 0.25 cup fresh basil

Instructions

    Prep (10 minutes): Pat chicken dry and season both sides with salt and black pepper. Slice garlic; halve cherry tomatoes; tear basil; slice or tear mozzarella.

    Sear (10 minutes): Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until browned and cooked through (internal temp 165°F/74°C). Transfer chicken to a plate.

    Finish skillet (10 minutes): Reduce heat to medium. Add garlic to the skillet and cook 30 seconds. Add tomatoes and cook 3–4 minutes until they begin to burst. Return chicken to the skillet, top with mozzarella, cover, and cook 2–3 minutes until mozzarella melts.

    Serve (0 minutes): Turn off heat, drizzle balsamic vinegar over everything, and scatter basil on top.
