Ingredients

  • 200 g penne pasta
  • 120 g andouille sausage, sliced
  • 150 g large shrimp, peeled and deveined
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 onion, diced
  • 1 cup canned diced tomatoes
  • 1 cup chicken broth
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil
  • to taste salt(optional)
  • to taste black pepper(optional)

Instructions

    Heat olive oil in a large skillet over medium heat; add the sliced sausage and cook 3‑4 minutes until browned, then remove and set aside.

    In the same skillet, add onion, red and green bell peppers; sauté 5 minutes until softened.

    Stir in Cajun seasoning, then add the diced tomatoes and chicken broth; bring to a simmer.

    Add the uncooked penne pasta, cover, and cook 12‑15 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.

    Return the sausage to the pan, add the shrimp, and cook 3‑4 minutes until shrimp turn pink and are cooked through.

    Season with salt and black pepper to taste, then serve hot.
