Ingredients
- 4 large eggs
- 1 cup canned, drained and rinsed Organic Black Beans
- 1 tablespoon avocado oil
- 1/4 cup finely diced yellow onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 6 large whole leaves romaine lettuce leaves
- 1 ripe avocado
- 1 tablespoon fresh lime juice
- 1/2 cup halved cherry tomatoes
- 2 tablespoons chopped fresh cilantro(optional)
Instructions
- 1
Mash the avocado with the fresh lime juice and a pinch of salt in a small bowl; set aside.
- 2
Heat the avocado oil in a skillet over medium heat. Add the diced yellow onion and cook 3 minutes until softened.
- 3
Stir in the Organic Black Beans, garlic powder, chili powder, ground cumin, and salt. Cook 4-5 minutes, mashing lightly, until warmed and slightly creamy.
- 4
In a bowl, whisk the eggs with a pinch of salt and pepper. Push the beans to one side of the skillet (or use a second pan), pour in the eggs, and scramble gently until just set, about 3 minutes.
- 5
Spoon the avocado mash down the center of each romaine lettuce leaf.
- 6
Top with the scrambled eggs, spiced black beans, and cherry tomatoes. Sprinkle with fresh cilantro if using and serve immediately.
