Ingredients
- 3 cups Whole wheat flour
- 2 cups Warm water (approx 110°F)
- 2.25 teaspoons Active dry yeast
- 0.25 cup Coconut sugar or Honey
- 0.5 teaspoon Salt
- 1 teaspoon Nutmeg
- 1 teaspoon Vanilla extract(optional)
- 3 cups Vegetable oil for deep frying
- 0.5 teaspoon Cinnamon

In a small bowl, dissolve the yeast and 1 teaspoon of the sugar in 1/2 cup of the warm water; let it sit for 5-10 minutes until foamy.

In a large mixing bowl, whisk together the whole wheat flour, remaining sugar, salt, nutmeg, and cinnamon.

Make a well in the center of the dry ingredients and pour in the yeast mixture, the remaining warm water, and vanilla extract.

Mix thoroughly by hand or with a wooden spoon for about 5 minutes until the batter is smooth and elastic; it should be thick but pourable.

Cover the bowl with a clean damp cloth or plastic wrap and place in a warm, draft-free area to rise for 1 to 1.5 hours until doubled in size.

Heat the oil in a deep pot over medium heat to approximately 350°F (175°C).

Deflate the batter slightly, then use your hand or a small scoop to drop small spheres of dough into the hot oil, being careful not to overcrowd the pot.

Fry for 3-5 minutes, turning frequently with a slotted spoon until the balls are golden brown and cooked through, then drain on paper towels.
