Ingredients

  • 3 cups day-old cooked rice
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 eggs
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil(optional)
  • 2 green onions, sliced(optional)

Instructions

  1. 1

Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the eggs and scramble until just set, about 1-2 minutes, then remove and set aside.

  2. 2

Add remaining oil to the pan, then stir in the garlic and frozen vegetables. Stir-fry for 3-4 minutes until vegetables are heated through.

  3. 3

Add the day-old rice, breaking up any clumps, and stir-fry for 4-5 minutes until heated through and slightly crispy.

  4. 4

Return the eggs to the pan, add soy sauce and sesame oil, and toss everything together for 1 minute. Top with green onions and serve hot.
