Vegetarian Huevos Rancheros

Ingredients
- 4 Corn tortillas
- 4 Eggs
- 1 cup Refried black beans
- 1 cup Salsa roja
- 1 Avocado(optional)
- 1 handful Cilantro(optional)
- 2 tablespoons Vegetable oil
- 2 tablespoons Cotija cheese(optional)
Instructions

Heat the refried beans in a small saucepan over low heat until warm. If too thick, add a splash of water.

In a small skillet, heat the salsa until simmering, then keep warm.

In a large skillet, heat 1 tablespoon of oil over medium-high heat. Fry each tortilla for about 30 seconds per side until slightly crisp but still pliable. Drain on paper towels.

In the same skillet, add the remaining oil and fry the eggs to your preference (sunny-side up or over-easy is traditional).

To assemble, place two tortillas on each plate. Spread a layer of warm beans over each tortilla.

Place one fried egg on top of each bean-covered tortilla.

Spoon the warm salsa over the eggs, leaving the yolks exposed if desired.

Garnish with sliced avocado, crumbled cotija cheese, and fresh cilantro.
