15-Minute Chickpea Tacos

Ingredients

  • 15 oz Canned chickpeas
  • 1 tbsp Taco seasoning
  • 1 tbsp Olive oil
  • 6 pieces Small corn or flour tortillas
  • 1 cup Shredded cabbage or lettuce
  • 1 wedge Lime
  • 0.25 cup Salsa(optional)
  • 2 tbsp Greek yogurt or sour cream(optional)

Instructions

    Drain and rinse the chickpeas thoroughly, then pat them dry with a paper towel.

    Heat olive oil in a large skillet over medium-high heat.

    Add chickpeas and taco seasoning to the skillet. Sauté for 5-7 minutes until chickpeas are slightly crispy and fragrant.

    While chickpeas cook, warm the tortillas in a dry pan or microwave for 15 seconds.

    Assemble tacos by placing a spoonful of chickpeas into each tortilla.

    Top with shredded cabbage, salsa, a dollop of yogurt, and a squeeze of fresh lime juice.
