Ingredients
- 8 pieces Corn tortillas
- 2 cups Salsa verde
- 3 tablespoons Vegetable oil
- 2 large Eggs
- 0.25 cup Queso fresco
- 2 tablespoons Red onion
- 1 handful Cilantro(optional)
- 2 tablespoons Sour cream(optional)

Cut the corn tortillas into triangles.

Heat 2 tablespoons of oil in a large skillet over medium-high heat. Fry the tortilla triangles until crisp and golden. Remove and drain on paper towels.

In the same skillet, pour in the salsa verde and bring to a simmer over medium heat.

Add the fried tortilla chips to the salsa and toss gently to coat. Cook for 2-3 minutes until the chips are slightly softened but still have some bite.

While the tortillas simmer, fry the eggs to your preference in a separate small pan with the remaining oil.

Divide the chilaquiles between two plates. Top each with a fried egg, crumbled queso fresco, diced red onion, cilantro, and a drizzle of sour cream.
