  • 15 oz canned chickpeas, drained and patted dry
  • 8 oz halloumi cheese, sliced into 1/2-inch strips
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 4 pieces pita breads
  • 1/2 cup tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped(optional)

Instructions

    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    In a large bowl, toss the dried chickpeas and halloumi strips with olive oil, oregano, paprika, and garlic powder until evenly coated.

    Spread the chickpea and halloumi mixture in a single layer on the prepared baking sheet.

    Roast for 15-20 minutes, flipping the halloumi halfway through, until the cheese is golden brown and the chickpeas are slightly crispy.

    During the last 2 minutes of roasting, wrap the pita breads in foil and place them in the oven to warm through.

    Spread a generous tablespoon of tzatziki sauce onto the center of each warm pita.

    Divide the roasted chickpeas and halloumi among the pitas, then top with tomatoes, cucumbers, and red onions.

    Garnish with fresh parsley if desired, fold the pitas, and serve immediately.
