Ingredients

  • 1 pound Ground lamb
  • 1 pound Ground beef (80/20)
  • 1 medium Yellow onion, finely grated and drained
  • 3 cloves Garlic, minced
  • 1 tablespoon Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried marjoram
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 6 rounds Pita bread
  • 1 cup Tzatziki sauce

    Place the lamb, beef, salt, and spices in a food processor and pulse until the mixture forms a very fine, tacky paste.

    Add the grated onion and garlic, then process for another 30 seconds until the mixture is completely smooth and emulsified.

    Pack the meat mixture tightly into a greased loaf pan, ensuring there are no air pockets.

    Bake at 325°F (165°C) in a water bath for 45-60 minutes or until the internal temperature reaches 165°F.

    Remove from the oven, drain any excess fat, and place a heavy weight on top of the meat for 15 minutes to compress it.

    Once cooled slightly, remove the meat loaf from the pan and slice it into very thin strips.

    Sear the thin slices in a hot skillet with a teaspoon of oil until the edges are crispy and browned.

    Serve the meat inside warm pita bread with tzatziki, sliced tomatoes, and red onions.
