Ingredients

  • 1.5 lbs Boneless skinless chicken thighs
  • 1 cup Greek yogurt
  • 0.5 large Cucumber, grated and squeezed dry
  • 3 pieces Garlic cloves, minced
  • 2 tbsp Lemon juice
  • 1 tbsp Dried oregano
  • 3 tbsp Olive oil
  • 4 pieces Pita bread rounds
  • 0.5 cup Red onion, thinly sliced
  • 1 cup Cherry tomatoes, halved
  • 1 tbsp Fresh dill, chopped(optional)
  • 1 tsp Salt and black pepper

Instructions

    In a large bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, oregano, half the garlic, salt, and pepper.

    Slice the chicken into thin strips, toss in the marinade, and let sit for at least 30 minutes in the refrigerator.

    Prepare the tzatziki by mixing the Greek yogurt, grated cucumber, remaining garlic, remaining lemon juice, and dill in a small bowl.

    Heat a large skillet over medium-high heat and cook the chicken strips until golden brown and cooked through, about 8-10 minutes.

    Lightly toast the pita bread in a dry pan or over an open flame until soft and pliable.

    Spread a generous dollop of tzatziki sauce down the center of each warm pita.

    Layer the cooked chicken, sliced red onions, and cherry tomatoes on top of the sauce.

    Fold the pita tightly and serve immediately, optionally wrapping the bottom in foil to hold it together.
