Ingredients
- 4 large Flour tortillas
- 1 can Canned black beans, drained and rinsed
- 1.5 cups Shredded cheddar or Monterey Jack cheese
- 0.5 cup Frozen or canned corn
- 1 teaspoon Cumin
- 0.5 teaspoon Chili powder
- 1 tablespoon Olive oil
- 0.25 cup Salsa(optional)
Instructions

In a medium bowl, mix the black beans, corn, cumin, and chili powder together.

Place two tortillas on a flat surface and sprinkle a layer of cheese over each.

Spread the bean and corn mixture evenly over the cheese-covered tortillas.

Add another layer of cheese on top of the beans and cover with the remaining two tortillas.

Heat olive oil in a large skillet over medium heat.

Place one quesadilla in the skillet and cook for 3-4 minutes per side until the tortilla is golden brown and the cheese is melted.
