Vegetarian Black Bean Quesadillas

Ingredients

  • 4 large Flour tortillas
  • 1 can Canned black beans, drained and rinsed
  • 1.5 cups Shredded cheddar or Monterey Jack cheese
  • 0.5 cup Frozen or canned corn
  • 1 teaspoon Cumin
  • 0.5 teaspoon Chili powder
  • 1 tablespoon Olive oil
  • 0.25 cup Salsa(optional)

Instructions

    In a medium bowl, mix the black beans, corn, cumin, and chili powder together.

    Place two tortillas on a flat surface and sprinkle a layer of cheese over each.

    Spread the bean and corn mixture evenly over the cheese-covered tortillas.

    Add another layer of cheese on top of the beans and cover with the remaining two tortillas.

    Heat olive oil in a large skillet over medium heat.

    Place one quesadilla in the skillet and cook for 3-4 minutes per side until the tortilla is golden brown and the cheese is melted.

    Repeat with the second quesadilla.

    Slice into wedges and serve with salsa if desired.
