Ingredients

  • 200 g egg noodles
  • 100 g imitation crab sticks
  • 1 medium carrot
  • 1/2 cup red bell pepper
  • 1/2 cup snow peas
  • 2 stalks green onions
  • 2 tbsp soy sauce
  • 1 tsp grated fresh ginger
  • 1 clove minced garlic
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tsp cornstarch(optional)
  • 2 tbsp water(optional)

Instructions

  1. 1

Cook the egg noodles according to package directions (about 5 minutes), then drain and set aside.

  2. 2

While noodles cook, julienne the carrot, slice the red bell pepper, and trim the snow peas; set the vegetables aside.

  3. 3

Heat vegetable oil in a large skillet or wok over medium‑high heat; add garlic and ginger, sauté 30 seconds until fragrant.

  4. 4

Add the carrots, bell pepper, and snow peas; stir‑fry 3‑4 minutes until crisp‑tender.

  5. 5

Stir in the imitation crab sticks and sliced green onions; cook 1 minute.

  6. 6

Mix soy sauce, sesame oil, cornstarch, and water in a small bowl; pour into the pan and toss to coat the noodles and veggies, cooking another 2‑3 minutes until the sauce thickens.

  7. 7

Add the cooked noodles, toss everything together, and serve immediately.
