Ingredients

  • 1/2 lb Ground turkey (93% lean)
  • 1 lb Potatoes (Yukon gold or russet), diced
  • 2 cups Green cabbage, shredded
  • 2 medium Carrots, sliced
  • 1/2 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Chicken broth (low-sodium preferred)
  • 2 tbsp Tomato paste
  • 1 tbsp Apple cider vinegar
  • 1/2 tsp Dried thyme
  • 1/2 tsp Paprika
  • 1 tbsp Olive oil
  • 1/2 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Prep (15 minutes): Dice potatoes and onion, slice carrots, shred cabbage, and mince garlic.

  2. 2

Cook the turkey (about 5 minutes): Heat olive oil in a pot over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon.

  3. 3

Build the base (about 5 minutes): Add onion and carrots; cook until the onion softens. Stir in garlic, tomato paste, thyme, and paprika, cooking until fragrant.

  4. 4

Simmer the stew (about 40 minutes): Add potatoes and chicken broth. Bring to a simmer, then reduce heat to medium-low and cook until potatoes are tender, about 30–35 minutes.

  5. 5

Finish (about 5 minutes): Stir in shredded cabbage and apple cider vinegar. Simmer until cabbage is just tender, about 5 minutes. Taste and adjust salt/pepper if needed, then serve.
