Ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 5 units Large eggs, separated
  • 1 cup Granulated sugar
  • 0.33 cup Whole milk
  • 12 ounces Evaporated milk
  • 14 ounces Sweetened condensed milk
  • 2 cups Heavy whipping cream
  • 0.5 cup Dulce de leche
  • 2 teaspoons Vanilla extract

Instructions

  1. 1

Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.

  2. 2

Whisk egg yolks with 3/4 cup sugar until pale yellow, then stir in 1/3 cup whole milk and vanilla.

  3. 3

In a separate bowl, beat egg whites until stiff peaks form, gradually adding the remaining 1/4 cup sugar.

  4. 4

Fold the flour and baking powder into the yolk mixture, then gently fold in the egg whites until just combined.

  5. 5

Fill cupcake liners 3/4 full and bake for 18-20 minutes or until a toothpick comes out clean.

  6. 6

Whisk together the evaporated milk, sweetened condensed milk, and 1/4 cup heavy cream to create the soaking liquid.

  7. 7

Poke holes in the warm cupcakes with a fork and slowly pour the milk mixture over them until fully absorbed.

  8. 8

Chill for 2 hours, then top with whipped heavy cream and a generous drizzle of warmed dulce de leche.
