Ingredients

  • 1 can (15 oz / 425 g) Canned white beans (cannellini/navy), drained and rinsed
  • 1 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 cup (240 g) Crushed tomatoes
  • 1 tbsp Tomato paste(optional)
  • 1/2 tsp Italian seasoning(optional)
  • 1/4 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)
  • 1/4 cup Basil, chopped
  • 4 slices Bread (ciabatta or rustic loaf), sliced

Instructions

  1. 1

Prep (10 minutes): Drain and rinse the white beans. Mince the garlic and chop the basil. Slice the bread if needed.

  2. 2

Cook (15 minutes): Heat olive oil in a skillet over medium heat. Sauté garlic for about 30–60 seconds until fragrant.

  3. 3

Add crushed tomatoes, tomato paste (if using), Italian seasoning (if using), salt, and pepper. Simmer for 5 minutes.

  4. 4

Stir in the white beans and simmer 8–10 minutes, stirring occasionally, until the mixture is warm and slightly thickened.

  5. 5

Toast the bread while the beans finish simmering (or toast separately). Spoon the warm tomato-basil white beans over the toast and top with basil.
