Ingredients

  • 4 slices sourdough or white bread
  • 6 oz cheddar cheese
  • 2 tbsp butter
  • 1 cup tomato
  • 10.75 oz tomato soup (canned)
  • 1 tbsp basil (fresh or dried)
  • 1/4 tsp garlic powder(optional)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Prep (8 minutes): Slice the cheddar to fit between bread slices. If using fresh tomato, dice it. Set out butter and basil.

  2. 2

Cook (12 minutes): Warm the tomato soup in a small saucepan over medium heat until steaming, about 8 minutes. Stir in diced tomato (if using), basil, garlic powder (optional), and black pepper (optional).

  3. 3

Assemble and grill: Heat a skillet over medium heat. Butter one side of each bread slice. Place two slices butter-side down, add cheddar, top with remaining bread (butter-side up). Cook 2–3 minutes per side until golden and the cheese melts, about 4 minutes total.
