Ingredients

  • 180 g Elbow macaroni (dry)
  • 3 cups Water
  • 1/2 tsp Salt(optional)
  • 2 tbsp Unsalted butter
  • 2 tbsp All-purpose flour
  • 3/4 cup Milk (any)
  • 1 cup Cheddar cheese (shredded)
  • 1/2 cup Mozzarella cheese (shredded)
  • 1/4 cup Parmesan cheese (finely grated)
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Bring 3 cups water to a boil in a large skillet. Add the macaroni and (if using) salt; cook, stirring occasionally, until the pasta is tender and most of the water is absorbed, about 12–14 minutes.

  2. 2

In the last 2 minutes of pasta cooking, reduce heat to low. Stir in butter, then sprinkle in flour and cook for 30–60 seconds, stirring constantly.

  3. 3

Pour in the milk and stir until smooth and slightly thickened, about 1–2 minutes. Turn off heat and add cheddar, mozzarella, and parmesan; stir until fully melted and creamy.

  4. 4

Taste and adjust with black pepper (and extra salt if needed). Serve immediately.
