Ingredients
- 300 g beef (sirloin or flank), thinly sliced
- 2 tbsp soy sauce
- 1 tsp fish sauce(optional)
- 1 tbsp brown sugar
- 1 tbsp lime juice
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1.5 tbsp chili sauce (Thai-style sweet chili or sriracha)

Instructions
- 1
Prep (10 minutes): Slice beef thinly. Grate ginger, mince garlic, and mix the sauce in a bowl: soy sauce, fish sauce (if using), brown sugar, lime juice, and chili sauce. If using cornstarch, stir it into the water and set aside.
- 2
Cook (15 minutes): Heat a large skillet or wok over high heat and add oil. Add beef in a single layer and stir-fry 3–4 minutes until browned.
- 3
Add ginger and garlic and stir-fry 30–60 seconds until fragrant.
- 4
Pour in the sauce and toss to coat. Simmer and reduce 6–8 minutes until glossy. If using cornstarch slurry, add it now and stir 30–60 seconds to thicken.
- 5
Finish: Turn off heat, taste and adjust sweetness/heat with a little extra chili sauce or lime. Serve immediately (garnish with green onions and chili flakes if desired).
