Ingredients
- 250 g boneless pork shoulder or pork loin, thinly sliced
- 2 stalks lemongrass stalks, bruised and cut into 2-inch pieces
- 1 tbsp fresh ginger, peeled and thinly sliced
- 2 cloves garlic, minced
- 1 small shallot, finely sliced (or small onion)
- 2 cups low-sodium chicken or pork broth
- 1.5 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp brown sugar
- 1 tbsp lime juice
- 1 tsp Thai red chili paste (or sriracha)(optional)
- 180 g rice noodles (medium), dry

- 2 tbsp green onions, sliced(optional)
Instructions

Add lemongrass and ginger, then pour in broth, fish sauce, soy sauce, and brown sugar. Bring to a simmer and cook 12–15 minutes, stirring occasionally and skimming if needed.
- 4
Finish and toss: Remove lemongrass pieces (discard). Stir in lime juice and chili paste (if using). Add drained noodles and toss in the broth for 2–3 minutes until coated and hot. Serve topped with green onions and cilantro/basil.
