Ingredients
- 1 cup Jasmine rice, broken or blended
- 6 cups Chicken or pork broth
- 250 grams Ground pork
- 2 tablespoons Light soy sauce
- 1 teaspoon White pepper
- 2 tablespoons Ginger, julienned
- 4 large Eggs
- 2 stalks Green onions, sliced
- 1 tablespoon Crispy fried garlic(optional)
- 1 teaspoon Sesame oil(optional)
Instructions
- 1
Rinse the broken jasmine rice and place it in a large pot with the broth.
- 2
Bring to a boil, then reduce to a low simmer, stirring frequently to prevent sticking until the rice breaks down into a smooth porridge consistency.
- 3
While the rice simmers, mix the ground pork with 1 tablespoon of soy sauce and half the white pepper; form into small bite-sized meatballs.
- 4
Drop the pork meatballs into the simmering porridge and cook for 5-7 minutes until fully cooked through.
- 5
In a separate pot, boil water and cook the eggs for exactly 6 minutes, then immediately transfer to an ice bath to create soft-boiled eggs.
- 6
Season the porridge with the remaining soy sauce and white pepper to taste.
- 7
Ladle the porridge into bowls and peel the soft-boiled eggs, placing one in each bowl.
- 8
Garnish with julienned ginger, green onions, fried garlic, and a drizzle of sesame oil before serving.
