Ingredients

  • 3 cups cups cooked jasmine rice (day-old preferred)
  • 8 oz oz imitation crab, flaked
  • 2 eggs, beaten
  • 4 scallions, sliced
  • 3 cloves cloves garlic, minced
  • 2 tbsp tbsp soy sauce
  • 1 tsp tsp fish sauce
  • 1 tsp tsp sugar
  • 2 tbsp tbsp vegetable oil
  • 2 lime wedges
  • 2 tbsp tbsp cilantro, chopped(optional)
  • 1-2 sliced Thai chilies(optional)

Instructions

  1. 1

Prep (10 min): Flake the imitation crab, slice scallions, mince garlic, beat the eggs, and stir together soy sauce, fish sauce, and sugar in a small bowl. Break up any clumps in the cold rice with your hands.

  2. 2

Heat 1 tbsp oil in a large wok or skillet over medium-high heat. Pour in the eggs and scramble until just set, about 30 seconds, then transfer to a plate.

  3. 3

Add remaining oil to the wok. Stir-fry garlic and the white parts of the scallions for 30 seconds until fragrant.

  4. 4

Add the imitation crab and stir-fry for 1-2 minutes until warmed through.

  5. 5

Add the rice, breaking it up and tossing constantly for 2-3 minutes until heated and lightly toasted.

  6. 6

Pour the sauce mixture over the rice, add the scrambled eggs back in, and toss everything together for 1-2 minutes until evenly coated.

  7. 7

Remove from heat, stir in the scallion greens, and serve immediately with lime wedges, cilantro, and sliced chilies on the side.
