Ingredients

  • 450 g Ground turkey
  • 4 Spinach
  • 2 Green curry paste (check label for soy-free)
  • 400 ml Coconut milk (full-fat)
  • 0 g Fish sauce(optional)
  • 1.5 tbsp Lime juice
  • 3 Garlic
  • 1 tbsp Ginger
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Coconut aminos (optional, for saltiness)(optional)
  • 0.25 cup Cilantro, chopped(optional)

Instructions

  1. 1

In a bowl, mix ground turkey with salt and pepper. Shape into 12–14 small meatballs.

  2. 2

Heat olive oil in a saucepan. Add curry paste and cook 30–60 seconds until fragrant.

  3. 3

Stir in coconut milk and minced garlic/ginger. Simmer 5 minutes to meld flavors.

  4. 4

Add meatballs to the curry. Simmer gently until cooked through (10–12 minutes). Avoid boiling hard to keep meatballs tender.

  5. 5

Stir in lime juice and coconut aminos if using. Taste and adjust saltiness.

  6. 6

Wilt spinach in a separate pan or directly in the curry for the last 1 minute. Serve with cilantro (optional).
