Ingredients

  • 9 large Eggs
  • 6 cups Spinach
  • 4 cloves Garlic (minced)
  • 2 tbsp Lime juice
  • 1 tbsp Fish sauce(optional)
  • 1 tbsp Soy sauce(optional)
  • 1 tsp Dried basil (or oregano)(optional)
  • 1 tsp Chili flakes(optional)
  • 1 tbsp Olive oil(optional)
  • 1/4 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Whisk eggs with salt and pepper. Set aside.

  2. 2

In a small bowl, combine lime juice, fish sauce (if using), and soy sauce (if using). Set aside.

  3. 3

Heat olive oil in a skillet over medium-high heat. Add garlic and chili flakes; stir 30–45 seconds until fragrant.

  4. 4

Add spinach and stir-fry until just wilted and most moisture cooks off, 2–3 minutes.

  5. 5

Push spinach to the side and pour in eggs. Scramble gently, pulling curds through the spinach.

  6. 6

When eggs are nearly set, pour in the lime-sauce mixture and toss quickly to coat.

  7. 7

Sprinkle dried basil (or oregano) and cook 30–60 seconds more until aromatic.

  8. 8

Serve immediately as warm snack portions.
