Ingredients
- 18 pieces quail eggs
- 6 cups green cabbage
- 1/2 cup fresh Thai basil (or regular basil)
- 2 cloves garlic
- 1 tsp fresh ginger
- 1/2 tsp chili flakes(optional)
- 1 1/2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tsp lime zest(optional)
- 1 tbsp soy sauce (low-sodium)
- 1 tsp brown sugar (or palm sugar)(optional)
- 2 tbsp neutral oil (avocado/canola)
- 1 tbsp water(optional)
- 1/4 tsp black pepper(optional)
Instructions
- 1
Prep (15 minutes): Halve the quail eggs if you prefer extra surface area for crisping; otherwise keep whole. Shred the cabbage thinly. Mince garlic and ginger. Finely chop basil. Zest and juice the lime.
- 2
Cook (15 minutes): Bring a small pot of water to a boil. Gently add quail eggs and simmer 4 minutes for jammy centers, then drain and cool briefly. Peel carefully.
- 3
Cook (15 minutes): Heat 1 tbsp oil in a nonstick skillet over medium-high. Add peeled quail eggs and sear 6–8 minutes, turning until deeply golden and crisp on multiple sides. Transfer to a plate.
- 4
Cook (15 minutes): In the same skillet, add remaining 1 tbsp oil. Sauté garlic and ginger for 30–45 seconds until fragrant. Stir in fish sauce, soy sauce, lime juice, chili flakes (if using), and sugar (if using). Simmer 1 minute; add a splash of water only if needed to loosen.
- 5
Cook (15 minutes): Toss quail eggs back into the sauce for 30–60 seconds to coat. Turn off heat and fold in basil and lime zest (if using).
- 6
Serve: Pile shredded cabbage onto plates and spoon the chili-lime basil quail eggs over the top. Finish with black pepper if desired.
