  • 450 g Ground pork
  • 4 cloves Garlic
  • 1 tbsp Fresh ginger
  • 1 cup Thai basil(optional)
  • 1 cup Regular basil(optional)
  • 1 tsp Thai chili or red chili flakes(optional)
  • 2 tbsp Lime juice
  • 0 tbsp Fish sauce(optional)
  • 3 tbsp Coconut aminos(optional)
  • 1 tbsp Olive oil
  • 1 large head Cauliflower
  • 1 medium Red bell pepper(optional)
  • 2 stalks Green onion
  • 0.5 tsp Salt(optional)
  • 0.25 tsp Black pepper(optional)

Instructions

  1. 1

Rice the cauliflower: pulse florets in a food processor until rice-like; set aside.

  2. 2

In a bowl, mix lime juice with coconut aminos (and fish sauce if using; omit if avoiding).

  3. 3

Heat a wok or large skillet over high heat. Add olive oil; sauté garlic and ginger 30–45 seconds until fragrant.

  4. 4

Add ground pork. Cook, breaking up, until browned and cooked through (6–8 minutes).

  5. 5

Add sliced bell pepper (if using) and cook 1–2 minutes.

  6. 6

Pour in the sauce mixture; stir-fry 1–2 minutes until glossy.

  7. 7

Turn off heat; stir in basil and chili. Let basil wilt.

  8. 8

Serve over cauliflower rice. Top with green onion.
