Ingredients

  • 250 g ground pork
  • 30 g Thai basil (or sweet basil)
  • 4 cloves garlic
  • 2 to 3 Thai chilies (or serrano), finely chopped
  • 1.5 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce(optional)
  • 1 tsp brown sugar
  • 1 tbsp neutral oil
  • 2 cups cooked jasmine rice

Instructions

  1. 1

Prep (10 minutes): Mince the garlic and finely chop the chilies. Chop Thai basil (keep leaves mostly whole). Measure soy sauce, fish sauce, oyster sauce (if using), and sugar.

  2. 2

Cook (15 minutes): Heat oil in a large skillet or wok over medium-high heat. Add garlic and chilies and stir-fry 30–60 seconds until fragrant.

  3. 3

Add ground pork and break it up. Cook 6–8 minutes, stirring often, until browned and cooked through.

  4. 4

Stir in soy sauce, fish sauce, oyster sauce (if using), and sugar. Cook 1–2 minutes to coat and reduce slightly.

  5. 5

Turn off heat (or lower to low). Add Thai basil and toss 30–60 seconds just until wilted. Serve immediately over jasmine rice.
