Ingredients

  • 200 g wide rice noodles
  • 200 g ground pork
  • 1/2 cup Thai basil (or regular basil)
  • 3 cloves garlic, minced
  • 1.5 tbsp chili-garlic sauce
  • 1.5 tbsp soy sauce
  • 1 tsp fish sauce(optional)
  • 1 tsp brown sugar
  • 1 tbsp neutral oil
  • 1 tbsp lime juice

Instructions

  1. 1

Soak or cook the wide rice noodles according to package directions until just tender, then drain and set aside (about 10 minutes total prep/cook time for noodles).

  2. 2

While noodles cook, mix chili-garlic sauce, soy sauce, fish sauce (if using), and brown sugar in a small bowl; mince garlic and chop basil (about 10 minutes prep).

  3. 3

Heat oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up, until browned and cooked through, about 5 minutes.

  4. 4

Add garlic and stir for 30 seconds, then pour in the sauce mixture and simmer briefly until glossy, about 2 minutes.

  5. 5

Add drained noodles to the skillet and toss until evenly coated and hot. Turn off heat, toss in Thai basil and lime juice, and serve immediately (about 15 minutes total cook time).
