Ingredients

  • 12 oz red drum fillets
  • 0.5 tsp kosher salt
  • 0.25 tsp freshly ground black pepper
  • 1 large lime (zest and juice)
  • 0.5 cup fresh Thai basil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp fish sauce
  • 1 tsp honey
  • 0.5 tsp chili flakes(optional)
  • 3 medium zucchini
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp rice vinegar

Instructions

  1. 1

Prep (20 minutes): Pat fish dry and season both sides with salt and black pepper. Zest and juice the lime; mince garlic and grate ginger. Spiralize zucchini into noodles (or cut into thin ribbons).

  2. 2

Make Thai basil-lime sauce (during prep): In a small bowl, stir together lime juice, fish sauce, honey, rice vinegar, minced garlic, grated ginger, and chili flakes (if using). Gently fold in Thai basil leaves.

  3. 3

Cook (12 minutes): Preheat grill to medium-high. Lightly oil the grates. Grill red drum 4–6 minutes per side (until it flakes easily and reaches safe doneness).

  4. 4

Finish and serve: Spoon Thai basil-lime sauce over the hot fish. Toss zucchini noodles with lime zest/juice, fish sauce, and a drizzle of olive oil; plate alongside the fish.
