Ingredients

  • 8 Eggs
  • 1 bag Spinach
  • 4 cloves Garlic
  • 1 cup Thai basil (or regular basil)(optional)
  • 2 tbsp Fish sauce
  • 2 tbsp Lime juice
  • 1 tsp Chili flakes(optional)
  • 1 tsp Brown sugar (optional, for balance)(optional)
  • 1 tbsp Olive oil
  • 1 tsp Black pepper

Instructions

  1. 1

Mince garlic finely. Wash and squeeze spinach dry.

  2. 2

Heat a skillet over medium-high heat. Add olive oil and sauté garlic 30–45 seconds until lightly golden.

  3. 3

Add spinach and stir-fry 1–2 minutes until wilted; season with black pepper.

  4. 4

In a bowl, whisk eggs with lime juice and a pinch of pepper. Stir in fish sauce.

  5. 5

Lower heat to medium-low. Pour eggs into the pan and stir continuously with a spatula until softly set (about 3–4 minutes).

  6. 6

Turn off heat. Fold in basil and chili flakes; let residual heat finish the eggs without overcooking.

  7. 7

Taste and adjust with more lime or fish sauce. Serve immediately.
