Ingredients

  • 1 lb ground chicken
  • 4 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 tsp Thai chili or red pepper flakes(optional)
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar or sugar substitute
  • 1 cup fresh Thai basil (or regular basil)
  • 4 cups spinach
  • 1 tbsp cooking oil
  • 3 stalks green onions (sliced)(optional)

Instructions

  1. 1

In a small bowl, mix fish sauce, soy sauce, lime juice, and brown sugar until dissolved.

  2. 2

Heat a large skillet over medium-high heat. Add oil, then sauté garlic and ginger for 30–45 seconds until fragrant.

  3. 3

Add ground chicken and break it up. Cook 5–7 minutes until browned with crispy bits.

  4. 4

Add chili (if using) and pour in the sauce. Stir and simmer 1–2 minutes until thick and glossy.

  5. 5

Add spinach and toss until just wilted, 30–60 seconds.

  6. 6

Turn off heat and fold in basil so it stays bright and aromatic.

  7. 7

Finish with green onions and an extra squeeze of lime if desired. Serve hot.
