Ingredients

  • 2 Eggs
  • 2 cups Spinach(optional)
  • 1 lb Ground beef (or thin-sliced beef)
  • 1 cup Thai basil (or regular basil)
  • 4 cloves Garlic
  • 1 tbsp Ginger
  • 1 tsp Chili flakes (or fresh chili)
  • 3 tbsp Soy sauce
  • 1 tbsp Fish sauce (or soy sauce substitute)
  • 1 tbsp Lime juice
  • 1 tbsp Low-carb sweetener
  • 1/4 cup Chicken broth
  • 1 tsp Cornstarch(optional)
  • 1 tbsp Olive oil

Instructions

  1. 1

In a bowl, whisk eggs with 2 tbsp water; set aside.

  2. 2

Whisk soy sauce, fish sauce, lime juice, sweetener, and chicken broth in a separate bowl.

  3. 3

Heat olive oil in a wok or skillet over high heat. Add garlic and ginger; stir 15–20 seconds.

  4. 4

Add beef and cook until browned and crumbly (4–6 minutes).

  5. 5

Add chili flakes and pour in sauce. Simmer 1–2 minutes until glossy.

  6. 6

If using spinach, stir it in for 30–60 seconds to wilt.

  7. 7

Reduce heat to low. Slowly drizzle in whisked eggs while gently stirring to form soft egg ribbons (do not boil hard).

  8. 8

Turn off heat and fold in basil. Serve immediately.
