Ingredients

  • 300 g ground beef (80/20)
  • 30 g Thai basil (or regular basil)
  • 3 cloves garlic
  • 2 each Thai chilies (or serrano), finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 tbsp neutral oil
  • 2 cups cooked jasmine rice
  • 2 each eggs
  • 1/4 tsp salt(optional)

Instructions

  1. 1

Prep (10 minutes): Mince the garlic, finely chop the chilies, and roughly chop the Thai basil. Measure soy sauce, fish sauce, and brown sugar.

  2. 2

Cook (15 minutes): Heat a large skillet or wok over medium-high heat with the neutral oil. Add garlic and chilies and stir for about 30 seconds until fragrant.

  3. 3

Add the ground beef and cook, breaking it up, until browned and cooked through, about 8–10 minutes.

  4. 4

Stir in soy sauce, fish sauce, and brown sugar. Simmer and stir for 1–2 minutes to coat the beef.

  5. 5

Turn off heat and fold in Thai basil until just wilted, about 30–60 seconds.

  6. 6

Serve: Spoon the beef over rice and top with a fried egg (fried in a separate pan or the same pan after removing beef).
