Ingredients

  • 12 oz Shrimp, peeled and deveined
  • 4 pieces Tostadas (store-bought)
  • 1/2 cup Pineapple, diced
  • 1/4 cup Red onion, finely diced
  • 2 tbsp Lime juice
  • 2 tbsp Cilantro, chopped(optional)
  • 1/4 cup Teriyaki sauce
  • 1 tbsp Soy sauce
  • 1 tsp Honey(optional)
  • 1 clove Garlic, minced
  • 1 tsp Ginger, grated(optional)
  • 1 tsp Cornstarch(optional)
  • 1 tbsp Water(optional)
  • 1 tbsp Olive oil
  • 1/4 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Prep (15 minutes): Dice pineapple and red onion; chop cilantro if using. In a bowl, mix pineapple, onion, lime juice, and cilantro (if using) to make the pineapple-lime salsa. Mince garlic and grate ginger if using.

  2. 2

Cook (15 minutes): Pat shrimp dry and season lightly with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and just cooked through.

  3. 3

Make teriyaki glaze: Reduce heat to medium. Add garlic (and ginger if using) and stir for 30 seconds. Pour in teriyaki sauce and soy sauce; simmer 1–2 minutes. If you want it thicker, stir cornstarch with water and add to the skillet, cooking until glossy, about 30–60 seconds.

  4. 4

Assemble: Spoon teriyaki shrimp over tostadas and top with pineapple-lime salsa. Serve immediately.
