Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 3/4 cup plain whole milk yogurt
  • 2 tsp garam masala
  • 1 tbsp smoked paprika
  • 1/2 tsp ground turmeric
  • 3 cloves, minced garlic
  • 1 tbsp, grated fresh ginger
  • 2 tbsp lemon juice
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 2 tbsp, chopped fresh cilantro(optional)

Instructions

  1. 1

Preheat the oven to 425°F (220°C) and line a baking dish with foil.

  2. 2

Whisk together the yogurt, garam masala, smoked paprika, turmeric, garlic, ginger, lemon juice, oil, and salt in a large bowl.

  3. 3

Add the chicken thighs and coat thoroughly with the marinade. Let sit 10 minutes while the oven finishes heating (or up to 8 hours refrigerated for deeper flavor).

  4. 4

Arrange the thighs skin-side up in the baking dish and bake for 25-30 minutes, until the internal temperature reaches 175°F (74°C) and the edges are lightly charred.

  5. 5

Optional: broil 2-3 minutes at the end for extra char. Rest 5 minutes, garnish with cilantro, and serve.
