Ingredients

  • 150 g spiral pasta (fusilli)
  • 200 g ground beef (85% lean)
  • 2 tbsp taco seasoning mix
  • 1/2 cup corn kernels (frozen or canned, drained)
  • 2 tbsp cotija cheese, crumbled
  • 1 tbsp olive oil
  • to taste salt(optional)
  • to taste black pepper(optional)

Instructions

    Bring a pot of salted water to a boil, add the spiral pasta and cook according to package directions (about 9-11 minutes) until al dente; drain and set aside.

    While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the ground beef, breaking it up with a spoon, and sauté until browned and cooked through, about 5-6 minutes.

    Stir in the taco seasoning mix and corn, cooking for another 2 minutes until fragrant and the corn is heated through.

    Add the cooked pasta to the skillet, toss to combine, and cook together for 1-2 minutes to let flavors meld.

    Remove from heat, sprinkle crumbled cotija cheese on top, and season with additional salt and black pepper if desired. Serve immediately.
