Ingredients

  • 8 oz ground pork
  • 1 cup cooked glutinous rice (sticky rice)
  • 16 pieces shao mai / wonton wrappers
  • 1 tbsp fresh ginger, minced
  • 2 tbsp green onions, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice wine (shaoxing)(optional)
  • 1 tsp cornstarch
  • 1/4 tsp white pepper
  • 1/2 tsp sugar

Instructions

  1. 1

In a bowl, combine ground pork, ginger, green onions, soy sauce, sesame oil, rice wine, cornstarch, white pepper, and sugar. Mix until sticky and well combined (about 5 minutes).

  2. 2

Fold the cooked sticky rice into the pork mixture until evenly distributed.

  3. 3

Lay out the wrappers and place about 1 tablespoon of filling in the center of each. Gather the sides up around the filling, leaving the top open, and press gently to form the classic shao mai shape (about 20 minutes for all).

  4. 4

Line a steamer basket with parchment paper or cabbage leaves and arrange the dumplings without touching.

  5. 5

Steam over simmering water for 12-15 minutes, until the pork is cooked through and the wrappers are translucent.

  6. 6

Serve hot with soy sauce or chili oil for dipping.
