Ingredients

  • 200 g fresh tuna steak
  • 1 cup brown rice
  • 1 small avocado
  • 1/2 cup edamame (shelled)
  • 2 tablespoons pickled ginger
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon lime juice
  • 2 stalks green onions(optional)
  • 1 teaspoon sesame seeds(optional)

Instructions

  1. 1

Cook the brown rice according to package directions (about 15 minutes); let cool slightly.

  2. 2

While the rice cooks, dice the tuna into 1‑inch cubes.

  3. 3

In a small bowl, whisk together sriracha, soy sauce, sesame oil, and lime juice to make the dressing.

  4. 4

Toss the tuna cubes with the dressing and let sit for 5 minutes to absorb flavor.

  5. 5

Divide the cooked rice into two bowls, top with the marinated tuna, sliced avocado, edamame, and pickled ginger.

  6. 6

Garnish with optional green onions and sesame seeds before serving.
