Ingredients

  • 250 g chicken breast
  • 20 g Thai basil (or regular basil)
  • 180 g rice noodles (pad thai style)
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 1 to 2 red chili (or Thai chili)(optional)
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 2 tbsp neutral oil (or sesame oil)
  • 1 tsp cornstarch(optional)
  • 2 tbsp water(optional)

Instructions

  1. 1

Prep (12 minutes): Slice chicken thinly. Mince garlic and ginger. Finely chop chili. If using dried rice noodles, soak them in hot water until just pliable (about 5–7 minutes), then drain.

  2. 2

Cook (18 minutes): Heat a large wok or skillet over high heat with oil. Add chicken and stir-fry until mostly cooked and lightly browned, about 6–7 minutes.

  3. 3

Add garlic, ginger, and chili; stir-fry 30–60 seconds until fragrant. Stir in soy sauce, fish sauce, lime juice, and brown sugar. If using cornstarch, stir it with water and add to the sauce to lightly thicken.

  4. 4

Add drained noodles to the wok and toss to coat and heat through, about 4–6 minutes. Turn off heat and fold in basil until wilted, about 30–60 seconds. Serve immediately.
