Ingredients

  • 4 oz Ramen noodles (discard seasoning packets)
  • 1 tbsp Sesame oil
  • 3 tbsp Soy sauce (or tamari)
  • 1 tbsp Rice vinegar
  • 1 tbsp Sriracha (or chili garlic sauce)
  • 1 tsp Honey or brown sugar
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 1 tbsp Neutral oil (canola/vegetable)
  • 2 cups Broccoli florets
  • 1 medium Red bell pepper, thinly sliced
  • 1 medium Carrots, julienned
  • 1 tbsp Sesame seeds
  • 2 stalks Green onions, sliced(optional)

Instructions

  1. 1

Bring a pot of water to a boil. Cook ramen noodles according to package directions (about 3 minutes), then drain and set aside.

  2. 2

In a bowl, whisk together sesame oil, soy sauce, rice vinegar, sriracha, honey, garlic, and ginger to make the spicy sesame sauce.

  3. 3

Heat neutral oil in a large skillet or wok over medium-high heat. Stir-fry broccoli, carrots, and bell pepper for about 7–8 minutes until crisp-tender.

  4. 4

Add drained noodles to the skillet and pour in the sauce. Toss well for 3–4 minutes until everything is coated and hot. Turn off heat and top with sesame seeds (and green onions if using).
