Ingredients

  • 200 g penne pasta
  • 120 g chorizo sausage
  • 1 cup black beans, drained and rinsed
  • 1 cup fire‑roasted diced tomatoes
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp ground cumin
  • ¼ tsp red pepper flakes(optional)
  • 2 tbsp fresh cilantro, chopped(optional)
  • to taste salt
  • to taste black pepper

Instructions

  1. 1

Cook the penne in salted boiling water according to package directions (about 10‑11 minutes), then drain and set aside.

  2. 2

While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté 30 seconds until fragrant.

  3. 3

Add the crumbled chorizo to the skillet and cook 4‑5 minutes, breaking it up, until browned and its fat has rendered.

  4. 4

Stir in the fire‑roasted tomatoes, black beans, cumin, and red pepper flakes (if using). Simmer 3‑4 minutes to heat through and let flavors meld.

  5. 5

Add the cooked penne to the skillet, toss to combine, and drizzle with lime juice. Season with salt and black pepper to taste.

  6. 6

Remove from heat, garnish with chopped cilantro, and serve immediately.
