Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 cup red wine
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • 3 slices bacon, chopped
  • 8 oz cremini mushrooms, halved
  • 1 cup pearl onions, peeled(optional)
  • 3 cloves garlic, minced
  • 1 cup chicken stock
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 4 sprigs fresh thyme
  • 1 leaf bay leaf
  • 1/2 tsp black pepper

Instructions

  1. 1

Pat chicken thighs dry and season with black pepper. Cook bacon in a Dutch oven over medium heat until crisp, about 5 minutes; remove bacon, leaving fat.

  2. 2

Sear chicken skin-side down in the bacon fat until golden, about 4 minutes per side; remove and set aside.

  3. 3

Add butter, mushrooms, pearl onions, garlic, and ginger; sauté 5 minutes until browned. Stir in flour and cook 1 minute.

  4. 4

Pour in wine, soy sauce, and chicken stock, scraping up browned bits. Add thyme, bay leaf, bacon, and chicken; bring to a simmer.

  5. 5

Cover and simmer gently over medium-low heat for 25 minutes until chicken is cooked through and sauce is glossy. Remove bay leaf and thyme, adjust seasoning, and serve.
